以云南生产上推广品种为材料 ,种植在云南三个不同生态试点和采用两种栽培方式对小麦品种品质性状的变化进行了研究。结果表明 ,在不同生态环境下生产的小麦 ,品质性状有较大差异 ,出粉率表现为中、低海拔高于高海拔 ;蛋白质含量、湿面筋含量、沉降值、面团流变学特性等则随不同品种而在不同海拔点表现不一。栽培方式也对小麦的品质性状有较大影响 ,田麦栽培方式明显优于地麦栽培方式 ,适当的灌溉和合理的施肥 ,既可提高产量又可提高品质
Taking Yunnan Province as an example, the authors studied the variety of quality traits of wheat cultivars by using three kinds of cultivation methods in Yunnan Province. The results showed that there were great differences in the quality traits of wheat produced under different ecological environments. The yield of wheat flour was middle and low altitude above high altitude. The protein content, wet gluten content, sedimentation value and dough rheological characteristics Varies with different species at different elevation points. The cultivation methods also had a great influence on the quality traits of wheat. The cultivation methods of field wheat and wheat were obviously better than those of field wheat cultivation. Appropriate irrigation and reasonable fertilization could not only improve the yield but also improve the quality
