本文研究锥栗果用低剂量(60) ̄Coγ射线辐照贮藏过程中的淀粉酶、过氧化氢酶、淀粉、可溶性糖含量变化及不同包装不同温度下贮藏的失水率。结果表明:用低于2.0KGy射线辐照在贮藏初期有激活过氧化氢酶活性的作用,而在中后期(40天后)则下降;淀粉酶活性除2.0KGyγ射线辐射在初期有所加强外,其它均有抑制作用,抑制作用随剂量增大而减弱;淀粉及可溶性糖含量比对照组低,淀粉含量随贮藏时间增长而下降,可溶性糖含量先增加后下降,γ辐照塑料袋包装在前80天左右对锥栗果失水有一定的抑制作用,失水率随贮藏时间均成直线上升。
In this paper, the changes of amylase, catalase, starch and soluble sugar content during storage of low-dose (60) Coγ-rays of Castanea henryi were studied, and the storage rate of water storage at different temperatures and different packaging was studied. The results showed that the activity of catalase in the early storage was lower than 2.0KGy, but decreased in the later period (after 40 days). The activity of amylase was enhanced in the initial stage except 2.0KGy γ-rays , The others inhibited and the inhibition decreased with the increase of dosage. The content of starch and soluble sugar was lower than that of the control, the content of starch decreased with the increase of storage time, the content of soluble sugar increased at first and then decreased, In the first 80 days, the water loss of Castanea henryi had a certain inhibition effect, and the water loss rate increased linearly with the storage time.
