本文针对当前学生缺乏烹饪实验室安全知识及对安全事件防范意识不强的现状,提出以互联网+微课形式对学生进行烹饪实验室安全教育,并对烹饪实验室安全教育微课体系建设进行详细地论述,涵盖烹饪实验室规章制度类、器具质量安全问题、器具使用操作问题、烹饪原料安全问题、烹饪过程安全问题消防管理安全问题、用电用气安全问题等。并以器具的使用操作问题为例,制作微课,展示烹饪实验室安全教育微课形式。
In view of the current lack of cooking laboratory safety knowledge and awareness of safety incidents, this paper proposes that students should be educated in the safety education of cooking labs by means of Internet + micro-class, and detailed construction of micro-teaching system of safety education in cooking laboratory should be carried out. To discuss, covering the cooking laboratory rules and regulations category, appliance quality and safety issues, appliance operation problems, cooking ingredients safety issues, cooking process safety issues fire management safety issues, electricity and gas safety issues. Taking the appliance operation problem as an example, we make a micro-class to show the micro-class form of safety education in a cooking laboratory.
