利用气相色谱-质谱联用技术(GC-MS)建立橄榄油、大豆油和掺入大豆油的橄榄油的GC-MS指纹图谱,并分别匹配特征峰,通过特征峰比时,快速辨识橄榄油与掺伪橄榄油。结果表明:橄榄油指纹图谱匹配了7个共有峰,掺伪橄榄油指纹图谱共匹配了9个共有峰,利用共有峰差异可快速筛选掺伪橄榄油。经过质谱数据库分析,掺伪橄榄油中增加的色谱峰为C_(18:3)不饱和脂肪酸和C_(34:0)饱和脂肪酸。该方法简便、可靠,可用于橄榄油掺伪的快速检测。
GC-MS fingerprints of olive oil, soybean oil and olive oil mixed with soybean oil were established by gas chromatography-mass spectrometry (GC-MS) and matched respectively with the characteristic peaks. The results showed that the fingerprints of olive oil matched seven common peaks, and the fingerprints of adulterated olive oil matched a total of nine common peaks. The difference of common peaks could be used to screen adulterated olive oil rapidly. After mass spectrometry database analysis, the added peaks in adulterated olive oil were C 18: 3 unsaturated fatty acids and C 34: 0 saturated fatty acids. The method is simple and reliable, and can be used for rapid detection of adulterated olive oil.
