濮阳市餐饮具集中消毒单位现状分析及对策

目的了解濮阳市餐饮具集中消毒现状,为如何加强餐饮具集中消毒单位的卫生监管,提高餐饮具消毒合格率提供依据。方法根据国家有关卫生规范、标准对濮阳市18家餐饮具集中消毒单位现场监督检查,并对消毒后的待用餐饮具随机抽检。结果 18家餐饮具集中消毒单位均不完全符合卫生规定。所有单位均未建立检验室,其消毒餐饮具标签上均未标注保质期限,餐饮具抽检合格率68%。结论濮阳市餐饮具集中消毒单位现状不容乐观。设置准入条件,加强与工商、食品药品监管部门沟通,主动介入指导,杜绝监管空白,强化管理,是提高餐饮具集中消毒合格率的关键。 Objective To understand the status quo of centralized disinfection of tableware in Puyang City and provide evidence for how to strengthen the hygiene supervision of centralized disinfection units of tableware and improve the qualified rate of tableware disinfection. Methods According to the relevant national hygiene standards and standards, the on-site supervision and inspection of 18 catering and drinking utensils centralized disinfection units in Puyang City was conducted, and random sampling of the to-be-served tableware after disinfection was conducted. Results 18 catering units focused disinfection units are not fully in line with health regulations. All units have not set up a laboratory, its disinfection tableware labels are not marked on the shelf life, catering sampling pass rate of 68%. Conclusion Puyang City tableware disinfection unit status is not optimistic. Set access conditions, strengthen communication with the industry and commerce, food and drug regulatory authorities, take the initiative to intervene in the guidance, to eliminate regulatory gaps and strengthen management, is to improve the rate of centralized disinfection tableware with the key.
