Enamel protein has always been a subject of concern, it helps to understand the mineralization process of enamel development and demineralization in enamel carious lesions. In this paper, we reviewed the recent progress of enamel proteins in recent years. During enamel development, enamel proteins serve as templates for the formation of enamel crystals, which regulate the size and direction of enamel crystal growth. During enamel carious lesions, enamel The loss of protein and the demineralization of inorganic matter coexist, and protein loss and deposition and mineralization and remineralization are all reversible processes.
