目的了解杭州市市场销售国产预包装食品标示的配料表中含盐、高钠调味料、糖和食用油脂等配料的现状。方法采用统一调查表,抄录超市食品的前3位配料,同时分析其所有配料含盐、高钠调味料、糖和食用油脂的情况。结果共调查国产预包装食品5877种。所有配料中含盐或高钠调味料、糖、食用油脂的食品分别为3059种(56.4%)、4215种(72.0%)、2486种(43.2%);前3位配料含盐或高钠调味料、糖、食用油脂的食品分别为1243种(22.9%)、3069种(52.4%)、1540种(26.8%)。前3位配料中不含盐、高钠调味料、糖和食用油脂中任何一种的食品共1131种(21.4%),而所有配料中均不含上述4类配料的食品只有521种(9.9%)。结论市场销售的预包装食品中含盐或高钠调味料、糖、食用油脂等配料的食品比例较高,而有关食品营养成分的营养标签的标示率较低,市场提供的食品难以使大众实现限制盐、糖和脂肪摄入的饮食目标,有必要从食品生产、加工和营养标签标示的角度改善市场销售食品的现状。
Objective To understand the status quo of ingredients such as salt, high-sodium seasoning, sugar and edible oil in the ingredients list of domestic pre-packaged food in Hangzhou. Methods A unified questionnaire was used to transcribe the top three ingredients of food in supermarkets and analyze all the salt, sodium, seasoning, sugar and edible oils of the ingredients. Results A total of 5877 domestic-made pre-packaged foods were investigated. All the ingredients were 3059 kinds (56.4%), 4215 kinds (72.0%) and 2486 kinds (43.2%) of foods containing salt or high-sodium seasoning, sugar and edible oil. The first three ingredients were salt- Food, sugar and edible oil products were 1243 species (22.9%), 3069 species (52.4%) and 1540 species (26.8%), respectively. A total of 1131 species (21.4%) of the top three ingredients did not contain any of salt, sodium seasoning, sugar and edible oils, while only 521 (9.9%) of all the ingredients did not contain the above four ingredients %). Conclusion The pre-packaged foods sold in the market have a higher proportion of foods containing salt, high-sodium seasoning, sugar, edible oil and other ingredients, while the labeling of nutrition labels on the nutritional content of foods is relatively low.
