皇亭里有两副梅花糕担,摊主是林阿三和陶东和。梅花糕是在海棠糕基础上演变而来的,因制糕模具做成梅花形而得名。皇亭梅花糕馅心有鲜肉、菜猪油、豆沙、芝麻等,有咸有甜,价格便宜,是一种大众风味小吃。梅花糕的做法比海棠糕更别致,摊主现做现卖,购者在旁围观,制作过程如同欣赏艺术表演。做糕的酵面是预先用冷水调成糊状,放在一只有柄的紫铜壶内。梅花糕的模具是做在一只圆形铁盘锅中的,成管状形,上大下小,顶部成五瓣梅花形,一炉可做19只。制作时先将模具锅在炉子上烤热,刷上水油,只听咝咝响声,冒出一串油烟水汽,随即由师傅一手捏
