目的了解厦门市售小麦粉和玉米面中3种真菌毒素污染状况。方法对2013年6个区收集的流通市场上小麦粉和玉米面共计114份样品,用液相色谱-串联质谱法检测3种真菌毒素的含量,根据GB 2761-2011判断结果。结果小麦粉和玉米面中3种真菌毒素的检出率低于2010年全国平均水平。小麦粉中脱氧雪腐镰刀菌烯醇(DON)检出率最高达89.9%,其中6份样品检出值超过国家限量标准。玉米面中玉米赤霉烯酮(ZEN)的检出率最高达21.8%,3份样品检出值超过国家限量标准。散装样品检出率相对较高。结论厦门市售小麦粉和玉米面中受多种真菌毒素污染,相关部门应加强监管力度。
Objective To understand the three kinds of mycotoxin contamination in commercial wheat flour and maize flour in Xiamen. Methods A total of 114 samples of wheat flour and cornmeal were collected from the circulation market in 6 districts in 2013. The contents of 3 mycotoxins were determined by liquid chromatography-tandem mass spectrometry. The results were judged according to GB 2761-2011. Results The detection rates of three mycotoxins in wheat flour and cornmeal were lower than the national average in 2010. The detection rate of deoxynivalenol (DON) in wheat flour was up to 89.9%, of which 6 samples were detected above the national limit. The detection rate of zearalenone (ZEN) in cornmeal is up to 21.8%, and the detection value of three samples exceeds the national limit. Bulk sample detection rate is relatively high. Conclusion In Xiamen, the sale of wheat flour and cornmeal was contaminated with various mycotoxins, and relevant departments should strengthen their supervision.
