适于大棚栽培的香椿品种主要有油椿、红芽绿香椿。红油椿嫩芽初生时呈棕红色,随着芽苔伸长逐渐转变为绿色,叶有皱缩,嫩芽粗壮鲜亮、脆嫩、多汁、香气浓郁,微有苦涩味,腌制后香味纯正。芽耐低温,较早熟,市场销售价高,适合冬季保护地栽培,暖棚室栽培更好。红芽绿香椿嫩芽为深棕色,展叶后转为绿色,发芽较早,幼芽本质化较慢,生长旺盛、产量高,但味道不如红油椿,因嫩芽很快由红棕转为绿色,又称其为青芽。
