不同品种及不同个体的奶牛产奶能力相差较大，目前选择最普遍的品种为荷斯坦奶牛，俗称“黑白化奶牛”，该品种在良好的饲养管理条件下年产奶量可达5—7吨，高产者可达10吨。除黑白花奶牛外，还有丹麦红牛、乳肉兼用的西门塔尔牛等，产奶能力也较强，但种群数量较少。选好品种后还要选好个体。
