醋是日常生活中不可缺少的食品。我国酿醋历史十分悠久,一千多年前的《周礼》一书就有记载。醋是中国人历来爱用的调味品,适量用之,可使食物味道鲜美,增进食欲;烧骨头汤时加点醋,可使骨中所含的钙、磷等更多溶解于汤中;食用鱼蟹时加入一点醋,可以除腥味;凉拌瓜果蔬菜加点醋,既可杀菌,又能软化菜中纤维。醋在烹调中是不可缺少的调味品之一。
