通过理化检测,对贵州绿茶主要呈味物质及品质进行了研究。结果表明,氨基酸含量在0.9%~10.1%(平均值为3.31%),茶多酚在14%~29.8%(平均值为21.76%),咖啡碱含量在2.4%~5.2%(平均值为3.93%),儿茶素总量在9.70%~22.87%(平均值为17.43%)。说明贵州绿茶主要呈味物质含量丰富,品质优良。
Through physical and chemical testing, the main taste substances and quality of Guizhou green tea were studied. The results showed that the contents of amino acids ranged from 0.9% to 10.1% with an average of 3.31%, that of tea polyphenols from 14% to 29.8% with an average of 21.76% and caffeine ranging from 2.4% to 5.2% with an average of 3.93% ), Catechins in the total 9.70% ~ 22.87% (average of 17.43%). Guizhou green tea main taste rich substance content, high quality.
