中餐摆台技能对大部分职业学校来说,是旅游和餐饮行业的必备专业技能,也是学校专业教学的重点。不过可以发现,在不少学校中,对于中餐摆台技能的教学过程中,还存在着教学形式单一的误区,导致学生学习自主性不高。所以,在教师进行针对中餐摆台技能的教学过程中,应该对课程进行创新,积极引进新的教学方式。可以通过对教学组织设计的创新,来调动学生们自主学习的意愿,以此来发挥教师的引导作用,通过多变的学习形式、生动的教学环节及多种多样的比赛形式,来激发学生竞争性思维,提高中餐摆台技能教学过程中的知识的活泼性。
For most of the vocational schools, the Chinese food table setting skills are the necessary professional skills in the tourism and catering industry and also the focus of the school’s professional teaching. However, it can be found that in many schools, there is still a single misunderstanding of the form of teaching in the teaching process of Chinese food table setting skills, resulting in a low level of student learning autonomy.
