目的了解2012至2016年食品中微生物状况,为食品安全风险评估提供科学依据。方法根据《食品安全风险监测工作手册》食品微生物采样和检验要求进行监测。结果共监测687件样品,总体合格率95.20%。定型包装样品合格率高于散装样品。30件样品菌落总数和大肠菌群超过标准规定限值,总体超限率4.37%,3件样品致病菌阳性,总体阳性率0.44%。结论江津区食品致病菌检出率较低,但菌落总数和大肠菌群超限问题值得关注。
Objective To understand the status of microorganisms in food from 2012 to 2016 and provide a scientific basis for food safety risk assessment. Methods The monitoring was conducted according to the requirements of food microbiological sampling and testing in the Food Safety Risk Monitoring Workbook. A total of 687 samples were monitored. The overall pass rate was 95.20%. Qualified packaging samples pass rate higher than bulk samples. The total number of colony of 30 samples and coliform exceeded the standard limit, the overall rate of 4.37% overrun, three samples positive for pathogens, the overall positive rate of 0.44%. Conclusion The detection rate of foodborne pathogens in Jiangjin District is low, but the total number of colonies and coliform excess should be paid attention to.
