目的建立一种安息香荧光衍生法测定面粉及其制品中硼砂根的含量。方法安息香与硼离子形成复合物,在甘氨酸做缓冲溶液条件下,通过荧光分光光度法测定复合物中的硼,进而建立一种快速检测食品中的硼砂含量的方法。结果在该条件下硼砂根为10-7~10-5 mol/L范围内回归系数达到0.9999。利用该条件建立的测定面制品中硼砂的含量回收率为83%~102%,其中面粉中的回收率在100%左右。结论本研究证明使用该方法测定面粉及其制品中的硼酸根较为准确、可靠,为方便快速地测定食品中的硼砂提供了技术支持。
Objective To establish a benzoin fluorescence derivatization method for the determination of borax in flour and its products. Methods Benzoin forms complex with boron ion, and the content of boron in food is determined by fluorescence spectrophotometry under the condition of glycine as buffer solution. Results Under this condition, the regression coefficient of borax roots in the range of 10-7-10-5 mol / L reached 0.9999. The content of borax in the test surface product established by this condition was 83% ~ 102%, of which the recovery rate in flour was about 100%. Conclusion This study demonstrates that the method for the determination of borate in flour and its products is more accurate and reliable and provides technical support for the convenient and rapid determination of borax in food.
