目的目的了解海南省5个市县餐饮食品微生物污染状况,为监管部门提供科学依据。方法按照海南省食品药品监督管理局2014年食品安全监督抽检和风险监测工作实施要求,从餐饮业抽取138批样品检测微生物污染状况。结果抽验9类127批次餐饮食品,43批菌落总数>1000CFU/g,57批检出大肠菌群。138批检测致病菌,24批盒饭1批检出金黄色葡萄球菌,14批凉拌菜2批检出金黄色葡萄球菌和1批检出沙门氏菌,5批熟肉制品2批检出金黄色葡萄球菌,其余均未检出致病菌。结论餐饮食品存在不同程度微生物污染,应加强食品安全卫生监督管理。
Objective To understand the microbial contamination status of catering food in 5 cities and counties of Hainan Province and provide scientific basis for the regulatory authorities. Methods According to the implementation requirements of food safety supervision sampling and risk monitoring in 2014 by Food and Drug Administration of Hainan Province, 138 batches of samples were taken from the catering industry to test the status of microbial contamination. Results Nine batches of 127 batches of food were sampled and the total number of 43 batches of colonies was more than 1000 CFU / g. Coliform bacteria were detected in 57 batches. 138 batches of detection of pathogenic bacteria, 24 batches of rice 1 batch detected Staphylococcus aureus, 14 batches of salad 2 batches were detected Staphylococcus aureus and 1 batch of Salmonella detected, 5 batches of cooked meat products 2 batches detected golden yellow grape Cocci, the rest were not detected pathogenic bacteria. Conclusion There are different levels of microbial contamination in catering food, and food safety and hygiene supervision and management should be strengthened.
