木耳菜,又名落葵、胭脂菜、胭脂豆、藤菜、豆腐菜、紫角叶等,原产于亚洲热带,在非洲、美洲也有分布。我国各地都有栽培,其知名度虽然不高,但栽培历史悠久,成书于2200多年前的《尔雅》中已有关于木耳菜的记载,是一种古老的蔬菜。因为它的叶子近似圆形,肥厚而黏滑,好像木耳的感觉,所以俗称木耳菜。木耳菜的嫩叶烹调后清香脆嫩,柔滑爽口,在我国沿江和南部诸多城乡备受群众推崇,在北方也有栽培,一直列入稀特蔬菜。
