中秋月饼是我国传统的应节性食品,生产时间短.数量大,品种类型多,营养丰富,其卫生质量的好坏,直接影响食用者的身体健康.现将我市1996、1997年对中秋月饼卫生质量的监测结果整理分析,为今后加强管理提供科学依据.1 材料与方法1996、1997年在中秋月饼生产期间,对本市84家月饼生产企业的抽样、送样样品,按《食品卫生检验方法》,检测菌落总数、大肠菌群、致病菌(沙门氏菌、志贺氏菌、金黄色葡萄球菌、溶血性链球菌)、酸价、过氧化值、黄曲霉毒素B_1、铅、砷,按GB 7100—86进行评价,各项指标均合格者为合格样品.
