为探明硒对蚕豆籽粒产量、硒含量、营养物质含量及抗氧化性的影响,以“崇礼蚕豆”和“凤豆6号”2个品种为试验材料,采用盆栽试验研究5个土壤施硒水平(Na2SeO3,以Se计0、3.1、6.2、12.4和24.8mg/kg)对硒在蚕豆籽粒中的富集规律、营养物质含量及1,1-二苯基-2-三硝基苯肼(DPPH)自由基清除力的影响。结果表明:在本试验条件下,适宜硒浓度能够提高蚕豆籽粒产量,而高浓度硒则降低蚕豆产量;施硒能够显著提高蚕豆籽粒硒含量(崇礼蚕豆和凤豆6号分别较对照提高21.3~35.8和4.97~7.60倍),籽粒硒含量与施硒浓度之间呈对数关系;硒同时可以影响籽粒中粗蛋白、粗纤维、粗灰分和单宁等物质的含量,而对总碳水化合物及植酸含量的影响并不显著;施硒可以显著提高籽粒提取物DPPH自由基清除力;硒对籽粒中物质含量和抗氧化性的影响在蚕豆品种间也存在一定的差异。因此,合理施硒具有增加硒含量和改善蚕豆营养品质的双重效益,低浓度硒处理(3.1mg/kg)便适于富硒蚕豆的开发。

The selenium content in grains was logarithmically related to the concentration of selenium applied. Selenium also affected the content of crude protein, crude fiber, crude ash and tannin in the grains, while the content of total carbohydrates And phytic acid content was not significant. Selenium application could significantly improve the DPPH radical scavenging ability of grain extract. The effect of selenium on the content and antioxidation of grain also had some differences among the varieties. Therefore, the rational application of selenium has the double benefit of increasing the content of selenium and improving the nutritional quality of broad bean, and the low concentration selenium treatment (3.1mg / kg) is suitable for the development of selenium-rich broad bean.
