麦粒菌种具有接种方便,用种量小,菌丝萌发快,长势旺,能在很短时间内在料面形成生物群体优势,减少杂菌污染等优点,较适合于规模生产。1991年10月我所与县食品罐头厂联营,利用冷库改造成出菇房,进行了工厂化生产。采用浸泡→预蒸→摊晾→拌料装瓶→灭菌→接种→培养的麦粒菌种生产新工艺,在4个月时间内成功地生产了13000瓶麦粒原种,成品率95%左右。现将该生产工艺介绍如下:
