介绍蔗果低聚糖的性质、功能、生产和研究进展.侧重介绍了国外对β-呋喃果糖苷酶和果糖苷转移酶的研究及采用葡萄糖氧化酶构成混合酶系生产高纯度蔗果低聚糖的研究状况.
Describes the properties, functions, production and research progress of the sugarcane oligosaccharides. Emphasis is placed on the researches abroad on β-fructofuranosidase and fructosyltransferase and the research on the production of high purity sugarcane oligosaccharides by using glucose oxidase as mixed enzyme.
