采用100头肥育期苏太猪,屠宰取背最长肌样品。测定各样品肌内脂肪(intramuscular fat,IMF)含量,并根据IMF含量将样品分成高、中、低3个组, 每组取肌内脂肪含量位于中间的20个个体为研究对象,共计60个个体,各组IMF百分含量(%)分别为(6.00±1.14)、(9.46±0.94)和(13.77±2.12)。采用RT-PCR方法测定各样品中脂肪酸合成酶(fatty acid synthase,FAS)和激素敏感脂酶(hormone-sensitive lipase,HSL)mRNA水平,并分析其与肌内脂肪含量之间的相关性,以揭示FAS和HSL的表达与肌内脂肪沉积的关系。结果表明,FAS或HSL基因表达水平与肌内脂肪含量之间并无显著的相关(P >0.05), FAS与HSL mRNA的比值与肌内脂肪含量之间存在着显著的正相关(R =0.464,P <0.01,P =60)。不同组别之间,随着肌内脂肪含量的增加,FAS与HSL比值有升高的趋势。推测FAS和HSL在猪背最长肌肌内脂肪的沉积中发挥着作用。关键词:脂肪酸合成酶;激素敏感脂酶;肌内脂肪;猪
Using 100 fattening Su-Tai pigs, slaughter back to take the longissimus muscle samples. The contents of intramuscular fat (IMF) in each sample were determined. According to the IMF content, the samples were divided into three groups: high, medium and low. The results showed that there was no significant correlation between FAS or HSL gene expression and intramuscular fat content (P> 0.05). There was a significant positive correlation between FAS and HSL mRNA content and intramuscular fat content (R = 0.464 , P <0.01, P = 60). Between the different groups, with the increase of intramuscular fat content, the ratio of FAS to HSL had an increasing trend.
