目的建立及优化爆米花中双乙酰含量的测定方法,并对潍坊地区市售爆米花中双乙酰含量进行检测。方法从爆米花预处理方法、料液比、蒸馏提取时间、显色时间及最佳检测波长等方面,建立并优化爆米花中双乙酰含量的检测方法,运用所建立的方法对6种市售爆米花中双乙酰含量进行测定。结果通过优化得到最佳提取工艺为:爆米花样品粉碎目数40目,料液比1∶5,蒸馏提取时间30 min,显色时间20 min,最佳检测波长335 nm,利用该方法测定6种市售爆米花中双乙酰的含量分别为7.15、10.85、5.05、7.50、7.40、6.25 mg/kg。结论试验建立的双乙酰含量的测定方法简单易行,有良好的回归性和可再现性,方法检出限为0.068 7μg/L。试验测得的潍坊地区6种市售爆米花中双乙酰含量均在美国香料和香精制造者协会(FEMA)规定范围内。
Objective To establish and optimize the method for the determination of diacetyl in popcorn and measure the content of diacetyl in commercial popcorn in Weifang. Methods The detection methods of diacetyl content in popcorn were established and optimized from the popcorn pretreatment method, the ratio of solid to liquid, the extraction time of distillation, the color development time and the optimal detection wavelength. The detection methods of diacetyl content in popcorn were established and optimized. Diacetyl content in popcorn was determined. Results The optimal extraction process was as follows: 40 mesh heads of popcorn, 1: 5 solid-liquid ratio, 30 min distillation time, 20 min color developing time, the best detection wavelength was 335 nm. The commercial popcorn diacetyl content were 7.15,10.85,5.05,7.50,7.40,6.25 mg / kg. Conclusion The method for the determination of diacetyl content was simple, feasible and reproducible. The detection limit was 0.068 7 μg / L. The diacetyl content of the six commercially available popcorn products in Weifang was measured within the limits set by the American Fragrance and Flavor Manufacturers Association (FEMA).
