目的通过抽检监测发现学校食堂及社会餐饮单位可能存在的食品安全风险隐患,为政府及相关职能部门实施监管提供科学依据。方法按照2013年度工作计划安排和《商丘市餐饮服务食品安全风险监测抽检实施方案》,在全市范围内随机抽取学校食堂和社会餐饮单位进行抽样监测。结果学校食堂整体食品安全风险小于社会餐饮单位。熟肉制品、碳酸饮料、含乳饮料、醋、蔬菜及面粉等检测情况较好。餐饮具、酱油、油条类样品检测合格率较低。结论监管部门应加强对社会餐饮单位日常监督管理,提高社会餐饮单位食品安全意识和餐饮服务水平。对餐饮具、酱油、油条类食品安全风险隐患较大的食品,纳入重点监管范围。
Objective To find hidden dangers of food safety risks in school canteens and social catering units through sampling inspection and provide scientific basis for the government and relevant functional departments to supervise. Methods According to the work schedule of 2013 and the implementation plan of food safety risk sampling in Shangqiu City, we randomly selected school canteens and social catering units in the whole city for sampling and monitoring. Results School cafeteria overall food safety risk is less than social catering units. Cooked meat products, carbonated drinks, dairy drinks, vinegar, vegetables and flour, etc. Detection of better. Tableware, soy sauce, fried dough samples lower pass rate. Conclusion The regulatory authorities should strengthen the daily supervision and management of social catering units and raise the awareness of food safety and the catering service of social catering units. On the tableware, soy sauce, fried dough food safety risks larger food, into the key regulatory scope.
