目的分析玉米须多酚成分及其抗氧化活性。方法采用Folin-Ciocalteu法测定玉米须中总多酚含量,利用HPLC法分析玉米须多酚成分;采用抗氧化能力指数(ORAC)法测定玉米须多酚的抗氧化活性。结果玉米须中总多酚含量为1.26 mg/g,含有儿茶素、绿原酸、咖啡酸、阿魏酸、根皮苷、槲皮素等多种多酚类物质,且具有一定的抗氧化活性,其平均ORAC值为469.6μmol TE/g。结论玉米须富含具有抗氧化活性的多酚成分,为玉米须进一步开发利用提供依据。
Objective To analyze the composition of polyphenols in corn silk and its antioxidant activity. Methods Folin-Ciocalteu method was used to determine the total polyphenols content in corn silk. The content of polyphenols in corn silk was analyzed by HPLC. The antioxidant activity of polyphenols in corn silk was determined by the method of antioxidant capacity index (ORAC). Results The content of total polyphenols in corn was 1.26 mg / g, containing many polyphenols such as catechin, chlorogenic acid, caffeic acid, ferulic acid, phlorizin and quercetin, Oxidation activity, with an average ORAC value of 469.6 μmol TE / g. Conclusion Corn fiber is rich in polyphenols with antioxidant activity and provides the basis for further development and utilization of corn.
