为了优化平菇培养料发酵工艺,提高发酵质量,试验监测了平菇培养料发酵过程的温度变化,比较了发酵料与熟料的养分差异,明确了加入不同数量放线菌对发酵过程的影响。研究结果表明,平菇培养料发酵过程伴随温度的升高,有部分干物质损失及营养成分变化,主要表现为C含量降低,N含量增加,C/N值降低。添加以放线菌为主要成分的促发酵剂,可提高发酵温度,缩短发酵时间,适宜添加比例为1.0‰。
In order to optimize the fermentation process of Pleurotus ostreatus culture and improve the quality of fermentation, the temperature changes during the fermentation of Pleurotus ostreatus culture were monitored, and the nutrient differences between the fermentation materials and clinker were compared. The effects of adding different amounts of actinomycetes on the fermentation process were clarified . The results showed that the fermentation process of Pleurotus ostreatus increased with the increase of temperature, some of the dry matter loss and changes of nutrients, mainly as C content decreased, N content increased, C / N value decreased. Adding Actinomycete as the main component of the starter, can increase the fermentation temperature, shorten the fermentation time, the appropriate proportion of 1.0 ‰.
