依据文献中的相关记载以及田野资料,科尔沁农耕蒙古族饮食结构的变迁可分为三个阶段,分别是旗的建置至伪满时期以肉食奶食为主的饮食结构、1949年至20世纪90年代末肉食奶食与谷物蔬菜相结合的饮食结构,本世纪初至如今以肉食谷物蔬菜为主的饮食结构。继而探讨变迁原因,包括体制政策的变革、外来文化的影响以及生产方式的改变。
