目前,人们从食品以外摄取的所谓外源性物质(Xenobiotic,非生体物质,生体异物)的机会正在增加。随着食品加工的进展以及在环境中新的化学物质不断增加的情况下,对食品成分的研究,除营养素外,还应包括来自环境中的外源性物质。这些物质与营养的关系,可概括为三方面问题:1.营养对外源性物质代谢酶的影响;2.外源性物质的摄取和营养需要量
At present, the chances of so-called exogenous substances (non-living matter, bio-foreign matter) that people take from outside of food are increasing. As food processing progresses and as new chemicals are added to the environment, research on food ingredients, in addition to nutrients, should include exogenous substances from the environment.
