岭沟米质细味香,营养丰富,历史上曾作“贡米”,产于陕西镇安县岭沟村因而得名。近年来,我们翻阅资料,多次深入产地了解其生产过程,对其主要营养成分与当地的水质、土质条件进行了分析,还开展了异地种植和其它品种引入岭沟试种等工作。现将所得结果报道于后。一、岭沟米的主要营养成份1.蛋白质含最:岭沟米蛋白质含量为10.97%,较南京11号,威优6号高出3.1与3.58%,较国内大米质量标准高4.17%,属高蛋白品种。2.氨基酸含量:据省农科院黄土高原农业测试中心测定,岭沟米氨基酸总含量为12.848%,较国内大米质量标准高出3.2倍,亦显著高于南京11号与威优6号。据研究,赖氨酸、亮氨酸、缬氨酸、精氨酸
