Mercury is one of the most toxic to organisms, so it is extremely important to have a reliable quantitative analysis. Mercury is relatively low in the environment, but it can be amplified through the food chain, and the final concentration in some foods can be quite high. In addition, its toxicity is closely related to the total concentration and chemical form, so the analysis of mercury speciation in food analysis is necessary to fully evaluate the potential toxicity of this element to humans. The Agilent 7700x ICP-MS can be used for quick and easy mercury speciation analysis, even with gradient HPLC analysis, which typically affects the plasma stability of some other ICP-MS instruments.
