本文对江苏省阳澄湖产中华绒螯蟹的商业品质,按商业品级和雌、雄,测定了其各部分含量和各项营养成分。该湖所产河蟹符合江南水乡青背、白肚、金爪、黄毛的大闸蟹形态特征。肌肉、肝脏及性腺三大可食部分共占体重的 36. 72%,壳、鳃、胃及心脏四大非可食部分共占体重的 53. 26%。另有 10. 02%为血淋巴和组织液。一、二级商品蟹的雌蟹可食部分各高出雄蟹 5. 28%和 6. 55%,营养成分中,雌蟹的脂肪显著高于雄蟹。在实测的9项微量元素中,雄蟹有7项高于雌蟹,雌蟹仅有磷高于雄蟹;在实测的17种氨基酸组成中,雄蟹有13项高于雌蟹,尤其谷氨酸、脯氨酸及丙氨酸,分别高出16.6O,23.3%及28.5%。雄蟹在微量元素和氨基酸组成方面优于雌蟹。
In this paper, the commercial quality of Chinese mitten crab (Eriocheir sinensis) produced in Yangcheng Lake of Jiangsu Province was determined by commercial grade, female and male, and its contents and nutritional components were determined. The crabs produced by the lake are in line with the morphological characteristics of the crabs in the southern stream, white belly, golden claws and yellow hair. Male crabs are superior to female crabs in the composition of trace elements and amino acids.
