不知从何时起,餐馆里出现了各式各样的捞饭,捞饭与海鲜肉类搭配滋生出许多品种,如海参捞饭、鱼翅捞饭等。我不知道这些标榜高档风味的捞饭源于何时何地,但在我还幼小的心里,就知道“捞饭”是山西农家人最家常最普通的主食。山西盛产小米,尤其是沁州黄小米,品质优良,因此,用小米做的“小米捞饭汤”是山西一道有名的家常饭。“小米捞饭”由焖饭和米淇汤组成,饭里有菜有米,有干有湿,特别是蔬菜在煮制的过程中,营养全部溶入汤里,吃起来香甜可口,营养丰富。
