为了快速检测水产品的新鲜度,采用电导率法测定草鱼鱼肉电导率在贮藏过程中的变化规律,验证电导率作为测定鱼肉新鲜度指标的可行性。测定-3和3℃贮藏过程中草鱼鱼肉浸出液的电导率、菌落总数、挥发性盐基氮质量分数w(TVB-N)、硫代巴比妥酸质量分数w(TBA)和鲜度指标K随贮藏时间的变化规律;利用最小二乘法计算电导率与菌落总数、w(TVB-N)、w(TBA)、K的相关性。结果表明:草鱼在-3和3℃贮藏条件下的电导率、菌落总数、w(TVB-N)、w(TBA)和K均随着贮藏时间的延长而增大,且电导率与菌落总数、K、w(TVB-N)、w(TBA)相关性极显著(P<0.01),相关系数r均大于0.960。电导率法可以作为快速判定草鱼新鲜度的有效方法。
In order to quickly detect the freshness of aquatic products, the conductivity of grass carp was measured by conductivity method during storage, and the conductivity was determined as an indicator of the freshness of fish. The electric conductivity, total number of colonies, TVB-N, thiobarbituric acid content w (TBA) and freshness index K With the change of storage time; calculated by least squares method the conductivity and the total number of colonies, w (TVB-N), w (TBA), K correlation. The results showed that the electric conductivity, the total number of colonies, the TVB-N, w (TBA) and K of the grass carp increased with the storage time at -3 and 3 ℃, and the conductivity and the total number of colonies , TVB-N (TVB-N) and w (TBA) were significantly correlated (P <0.01). The correlation coefficients r were all higher than 0.960. Conductivity method can be used as a fast method to determine the freshness of grass carp.
