To identified important odorants derived from phosphatidylethanolamine and free fatty acids of steamed male Eriocheir sinensis in model systems.The important odorants (IOs) of male Eriocheir sinensis formed by phosphatidylethanolamine (PE) and free fatty acids (FFAs) in model systems was investigated.And the influence of the oxidation temperature on the production of IOs from PE and FFAs and the oxidative kinetics were studied.Headspace-monothilic material sorptive extraction (HS-MMSE) combined with gas chromatography-mass spectrometry-olfactory (GC-MS-O) analysis was used to determine the IOs in E.sinensis,and headspace solid-phase microextraction (HS-SPME) followed by GC-MS was used to determine the volatile compounds formed by the PE and FFAs,which were separated from E.sinensis by silicic acid columns.A total of twenty-three IOs were detected with modified frequency value higher than 65%.The most abundance IOs of E.sinensis were carbonyl-containing compounds,including seven aldehydes and three ketones,which were mainly reported as the oxidation products of lipids.For the further analysis,hexanal,heptanal,nonanal,2-nonanone,2-pentylfuran and benzaldehyde were identified from PE,and the first five IOs from FFAs.Meanwhile,the optimized oxidation treatment condition of PE and FFA were 175 ℃ for 60 min and 175 ℃ for 90 min,respectively.This study is to be considered as an important work toward the comprehensive formation mechanism of the lOs in E.sinensis.
