Subcritical water technology(SWT)was employed to extract polysaccharides from okara(OP)and optimized by using response surface methodology(RSM).According to the experimental design and analysis of the Box-Behnken design(BBD),the experimental data were fitted to a second-order polynomial equation by multiple regression analysis,achieving and the optimum SWT conditions for OP as follows: extraction temperature 148.3 ℃,residence time 11.3 min and liquid-solid ratio 33.0 mL/g.Under these conditions,the experimental yield of OP(18.76%)was close to the predicted value(18.71%).
