Using the fruits of Ziziphus jujube.Junzao as materials, the physiologyical and morphological changes of Jun Jujube fruits including: weight of single fruit, soluble sugars, organic acid ,Vc, starch, cellulose, protein and sucrose, glucose, fructose were detected.Results showed that Jun jujube fruit development belongs to a typical double "S" type growth curve which present two fast development period in whole fruit development period, respectively is 15 days after the fruit seeting and the fruit development of 40 ～55 days.There is about 110 days from flowering to fruit ripeness.
