Inhibition of Various Foodborne Pathogens using Fractional Components of Chinese Wild Blueberries

  Foodborne illness outbreaks have been on the rise,and the main responsible pathogens to cause foodborne outbreaks were L.monocytogenes,Salmonella,S.aureus,V.parahaemolyticus and Escherichia coli O157∶H7.The objective of this study was to evaluate the growth of L.monocytogenes,S.aureus,S.enteritidis and V.parahaemolyticus treated with the Chinese wild blueberry (Vaccinium angustifolium) and which microorganism was most susceptible to these active substance,and to determine which fractional components have antimicrobial effects.The Chinese wild blueberry extracted by methanol: water: formic acid (85∶15∶0.5),was separated using a C-18 Sep-Pak.The content of total sugar,total phenolic and anthocyanin of wild blueberry concentrate was analyzed.A two-fold dilution method was used to determine the antibacterial effect of fractional components against the four strains.The results showed that the MIC (minimal inhibitory concentration) of wild blueberry extract against L.monocytogenes,S.aureus,S.enteritidis and V.parahaemolyticus respectively were 100,100,100 and 12.5 mg/mL.V.parahaemolyticus was the most susceptible to blueberry extract and fractions treatments,and the MBCs (minimal bactericidal concentration) of phenolic and anthocyanidins were 0.20,0.13 mg/mL.L.monocytogenes,S.aureus,S.enteritidis and V.parahaemolyticus were destroyed cell membrane with wild blueberry extract and fractions,the leakage of nucleic acids and proteins elevated.The Chinese wild blueberry extracts and fractional components which had strong antibacterial as shown in this study could be applied to the field of preventive medicine,food safety,and enrich the understanding of the health benefits of wild blueberry.
