论文部分内容阅读
Transglutaminase (TGase,protein-glutamine γ-glutamyltransferase,EC 2.3.2.13) is a recently developed enzyme to catalyze acyl transfer reactions resulting in the introduction of covalent cross-links between proteins, peptides and various primary amines. Therefore,it has potential applications in food processing, cosmetic, pharmacy and other industries.Streptomyces species are the main source of microbial transglutaminase (MTGase) and we have isolated a strain of Streptomyces hygroscopicus (CCTCC M203062) with highproductivity of MTGase from soil.
