Low field nuclear magnetic resonance (NMR) technique was used to evaluate the quality and behavior of water in different fruits during storage in room temperature.NMR Inverdion Recovery (IR) sequence was used to acquire the samples activated echo signals,spin-lattice relaxation T1 and the proton density according to T1.Different perishable fruits,such as Longan,Kiwifruit,Persimmon,Zaosu pear,Winter-Jujube,Sinkiang fragrant pear,Flowercow apple et al were investigated by NMR and MRI during storage.
