This study investigate the effect of high oxygen treatment on respiratory rate and quality of mulberry during storage time.Freshly harvested mulberry(Mours alba L) were placed in jars continuously ventilated respectively with air,25% O2,50%O2,75% O2 and 100%O2 at 5℃ for 10 days,and its respiratory rate and main qualities were detected every two days.The results indicated that high oxygen treatments could significantly reduce the respiratory rate,the decay index,weight loss,respectively 71.10 mg.g-1.h-1、47.83 mg.g-1.h-1、43.23 mg.g-1.h-1and 36.97 mg.g-1.h-1、32.67 mg.g-1.h-1,33.73% and 25.33%、21.07%、17.93%、14.60%,9.62%、6.54%、5.54%、4.91%、4.54% at the 10th day,while significantly improved its hardness and the contents of titratable acidity,soluble solids,vitamin C,total phenolic substances and flavonoids,of mulberry in the storage time,especially after the 6th day,respectively 8.07 N.cm-2、8.69 N.cm-2、8.70 N.cm-2、9.33 N.cm-2、9.48 N.cm-2 and 0.34%、0.37%、0.41%、0.44%、0.47% and 6.30%、7.47%、8.23%、8.67%、9.37% and 13.13 mg.100g-1、18.07 mg.100g-1、20.20 mg.100g-1、22.10 mg.100g-1、24.37 mg.100g-1 and 309.80 mg.100g-1、351.23 mg.100g-1、385.93 mg.100g-1、400.30 mg.100g-1、432.03 mg.100g-1 and 0.17%、0.19%、0.21%、0.25%、0.26% at the 10th day.The effect were increasingly significant with the oxygen concentration increases.This paper provides a theoretical basis for the High oxygen storage technology in mulberry preservation.
