传统的食品原料学教学大多是以教师为主体,师生间欠缺互动,学生普遍反馈学习效果差。为进一步提高食品原料学课程教学质量,本文从教学内容、教学方法和考核方式上进行改革和实践。重点强调了在教学内容上要注重内容的实用性和前沿性;在教学方法上,课堂教学运用了以教师为主导、学生为主体的案例教学法、主题教学法和启发式教学法等,并开发了“走出去、请进来”的教学模式;在课程考核方式上,开发了多元化、全方位的考核方式。实践表明,教学改革大大提高了学生的学习积极性,培养了学生学习本门课程的兴趣,提升了教学质量。
The traditional teaching of food raw materials mostly teachers as the main body, lack of interaction between teachers and students, students generally poor feedback effect of learning. In order to further improve the teaching quality of food raw materials course, this paper carries out the reform and practice from the teaching content, teaching methods and assessment methods. The emphasis is put on the practicality and cutting-edge of content in teaching content. In the teaching method, the classroom teaching adopts the case teaching method, the thematic teaching method and the heuristic teaching method which are mainly teachers and students. Developed a teaching mode of “going out and coming in”; and developed a diversified and all-encompassing assessment method in the curriculum assessment methods. Practice shows that the teaching reform has greatly enhanced the enthusiasm of students, fostered students’ interest in learning this course, and improved the quality of teaching.
