目的了解广州市越秀区超市的食品卫生状况,探讨超市食品卫生存在的主要问题。方法采用分层抽样的方法,分别随机抽取大、中、小型超市18、10、33家,进行食品卫生现场检查和问卷调查。结果共调查61家超市,98.4%以上的超市建立和落实了卫生管理、台帐和索证制度,持证率达100%;超市从业人员中88.3%的人能持证上岗。在售卖生鲜食品的超市中,只有3.4%设有食品快速检测室,24.1%的超市设有蔬菜的农药快速检测设备;近20%的超市对其售卖的散装食品不标识生产厂家、生产日期、保质期和储存方法。结论广州市越秀区超市食品的安全隐患主要来自于散装食品和自制食品,应加大对超市生鲜食品检测设备的配置和检疫,同时,应加强对小型超市从业人员的培训及管理。
Objective To understand the food hygiene status of supermarkets in Yuexiu District of Guangzhou City and to explore the main problems existing in the food hygiene of supermarkets. Methods By stratified sampling method, 18, 10, 33 large, medium and small-scale supermarkets were randomly selected for field inspection and questionnaire survey of food hygiene. Results A total of 61 supermarkets were surveyed. More than 98.4% of supermarkets were established and implemented hygienic management, accounting and certification systems, with a certificate rate of 100%. 88.3% of the supermarkets were employed. Among the supermarkets selling fresh food, only 3.4% provided fast food testing rooms and 24.1% supermarkets equipped with vegetable pesticide rapid testing equipment. Nearly 20% of the supermarkets did not identify the manufacturers for their bulk food sold, the production date , Shelf life and storage methods. Conclusion The hidden dangers of food in supermarkets in Yuexiu District of Guangzhou mainly come from bulk foods and home-made foods. The configuration and quarantine of fresh food testing equipment in supermarkets should be increased. At the same time, the training and management of the employees in small supermarkets should be strengthened.
