鲁菜以深厚的文化底蕴和悠久的历史传统著称。自先秦起逐渐升温,历经秦汉的长足发展,在唐宋时期鲁菜达到兴盛,明清之后又不断充实与升华。但随着社会环境、民俗习惯的变迁,鲁菜因其陈旧保守受到剧烈的冲击。本文试从历史、民俗的角度出发,对鲁菜的历史沿革进行阐释,针对其面临的困境提出了创新理念的解决路径。
Shandong cuisine is famous for its profound cultural background and long history tradition. Since Qin dynasty began to warm up gradually, after the great development of Qin and Han dynasties, Shandong flourished in the Tang and Song dynasties. After the Ming and Qing Dynasties, it continued to enrich and sublimate. However, with the social environment, changes in folk customs, Shandong cuisine because of its stale and violent impact. This article tries to explain the historical evolution of Shandong cuisine from the perspectives of history and folklore, and puts forward a solution to the innovative ideas in view of the difficulties it faces.
