军事医学科学院卫生学环境医学研究所建于1958年,主要任务是针对平战时各种环境和劳动因素对人体的影响,开展以增强健康素质和提高训练水平与作战能力为中心的卫生保障措施的研究。营养与食品卫生学是研究所的重点学科,于1951年建院初期即建立。曾组织全军开展营养与食品卫生调查,制订了部队营养供给量标准和食物定量标准;对营养缺乏的评价和防治措施进行研究;并观察特殊环境和劳动条件对营养代谢的影响及提高适应耐受能力和劳动效率的方法;探讨营养性疾病和创伤的发病过程及有效的营养防治方案;研究军用食品和营养强化剂,以满足部队的特殊需要;建立简易快速的食品卫生检验方法,适合基层单位在现场使用。1992年成立全军卫生监测中心,负责军内外食品营养分析与卫生检验任务。现为卫生学与军队卫生学博士学位授权点,营养与食品卫生学等三个硕士学位授权点。编辑出版《营养学报》、《中国应用生理学杂志》、《解放军预防医学杂志》三个刊物。
