以国家卫生标准中的饮用水、熟食品、厨房用具消毒三方面卫生微生物指标作为实验室检查标准,总结了1993至1995年上海口岸国际客轮食品卫生情况。食品卫生合格率从高到低顺序为饮用水、厨房用具消毒、熟食品,总合格率为94%。熟食品及砧卫生相对较差。从中日航线与沪港航线卫生监督相比较来看,沪港航线厨房用具消毒卫生较差。在厨房用具消毒卫生中,砧板消毒工作较差。建议加强熟食卫生和砧板消毒卫生工作。
Taking the national health standards of drinking water, cooked food, kitchen utensils sanitation three indicators of microbial health as a laboratory inspection standard, summed up the 1993-1995 Shanghai International Passenger Ferry food hygiene situation. Food hygiene pass rate from high to low order of drinking water, kitchen utensils disinfection, cooked food, the total pass rate of 94%. Health food and anvil health is relatively poor. From the Sino-Japanese route and Shanghai-Hong Kong route health supervision compared to the Shanghai-Hong Kong route kitchen appliances disinfection and health is poor. In the kitchen utensils disinfection, chopping disinfection work is poor. Proposed to strengthen cooked food hygiene and chopping board sanitation work.
