大白菜是我国北方的主要秋冬菜,每年冬季来临前,家家户户都要贮存。贮存白菜应该注意以下几点:(1)选包心紧实、无病虫害的白菜贮存。由于刚买回来的白菜水分大,易腐烂。贮存前应先撕去残破的黄叶,放在向阳的地方晾晒3—5天,让它失去一些水分。晒时要勤翻,让菜棵的两面都晒到,使外帮绵软,否则没晒着的一面,外帮容易捂黄、掉帮。(2)贮存白菜的前期要防热,后期要防冻,适宜储藏的温度
