该研究通过试验,采用不同浓度的壳聚糖溶液涂膜处理萝卜。本文探讨了萝卜在贮藏过程中的主要生理生化变化,试验结果表明,在常温条件下,萝卜经过45d的贮藏,呼吸强度、失水率、可溶性糖含量、糠心率、腐烂率等均明显优于对照,为萝卜的保鲜提供了另一途径。
