研究了10种英国小麦水溶性蛋白在酸性不连续PAGE条件下的电泳特性。结果表明,来自不同小麦品种的水溶性蛋白在实验条件下的电泳图谱存在有明显差异,即不同小麦品种的水溶性蛋白的电泳图谱不同。这就使得用小麦水溶性蛋白作为品种鉴定和遗传纯度分析成为可能。与此同时我们还对小麦水溶性蛋白质在不同溶剂中的行为进行了研究。在本研究的基础上对传统的Osborne小麦蛋白分类系统之缺陷进行了讨论
The electrophoretic properties of 10 kinds of UK wheat water-soluble proteins under acidic discontinuous PAGE were studied. The results showed that there was a significant difference in the electrophoretogram of water-soluble proteins from different wheat varieties under different experimental conditions, that is, the different electrophoresis patterns of water-soluble proteins of different wheat varieties were different. This makes wheat water-soluble protein as a species identification and genetic purity analysis possible. At the same time, we also studied the behavior of wheat water-soluble proteins in different solvents. On the basis of this study, the defects of the traditional Osborne wheat protein classification system were discussed
