茶叶作为饮料,在我国有四、五千年的历史,初为祭品与药用,后为日常饮用,泡饮方法多变,因时因地而异。近再读陆羽《茶经》六之饮一章中记述:“饮有(牜甬)(粗)茶、散茶、末茶、饼茶者。乃斫、乃熬、乃场、乃春、贮于瓶缶之中,以汤沃焉,谓之庵茶。或用葱、姜、枣、桔皮、茱萸、薄荷等,煮之百沸,或扬令滑,或煮去沫。斯沟渠间弃水耳,而习俗不已。”何谓“庵茶”查《玉篇》“庵,半卧半起病也,亦作殗”。在此指夹生之意。就是将茶叶放在瓶缶中,用沸水冲泡,叫做“夹生茶”,似今日之泡饮方法。其后又述用葱姜等和茶
